In Arbegona, a district in Sidama known for some of the highest growing areas in the region, smallholder farmers grow JARC 74158, an Ethiopian variety developed to help small farmers improve their harvests. The farmers pick each cherry by hand, choosing only what is ready, and tend their plots in the traditional way. Those high slopes and cool air give the coffee time to develop its sugars slowly.
Natural processing lets the whole cherry dry around the bean, the way it has been done in Ethiopia for generations. The result is a coffee shaped by patience, careful picking, and a community that knows its land well.
